If your anything like me, I need quick and easy recipes that literally take 30 minutes or less. The great thing about granola bars is you can make a batch on Sunday and you've got breakfast for the whole week! I wake up pretty earlier at around 4:30am so I eat them as my pre-breakfast so they are super versatile and would make a great mid-day or midnight snack as well. |
3 1/2-4 cups of granola
3/4 cup of maple syrup
1 cup of vegan chocolate chips
1/2 cup of raisins and/or cranberry peices
3/4 cups of creamy peanut butter
1/2 tsp of salt
1/2 tsp of vanilla
Boil maple syrup in a small saucepan for 1 minute.
Remove the maple syrup from the heat and stir in peanut butter, salt and vanilla until smooth.
Put granola in a medium bowl and coat evenly with maple syrup mixture.
Stir in chocolate chips and raisins.
Press the mix into a 8 X 8 square baking pan lined with parchment paper.
Cover and allow granola to completely cool.
Slice and Serve!
*store at in sealed container in fridge
